1000g strawberries
150g sugar
full vacuum. Macerate at room temperature 1 hour. 90C for 15 minutes. Depending on the time frame and desired result you can simply refrigerate for a few days or freeze and thaw to extract the juice.
Were using this as a base for a jam.
